One of my all time favorites recipes is my Chicken Carnival (which you can find here too), but today I needed to throw together something to take out on the boat and since I had some Chickpea Pasta on hand 👉🏼this!
‼️Chickpea Pasta is amazing! I found the Banza in bulk, 5 x 8oz. packages at Costco for about $8! ‼️This has about twice as much protein as your average pasta, less than half the net carbs, and is Low Glycemic, Gluten Free, Vegan and Non-GMO!
❤️Carnival Pasta Salad
What you need...
👉🏼8oz. package Chickpea Pasta
🌱2 cups baby spinach
❤️1/2 red bell pepper, chopped
💛1/2 yellow bell pepper, chopped
💛1/2 orange bell pepper, chopped
👉🏼1/4 onion, diced
👉🏼1/4 cup kalamata olives, chopped
👉🏼1/3 cup feta cheese (leave out for Vegan)
🌱1/4 cup dill, chopped
For the Dressing...
🍋the juice of 2 lemons
🍋the zest of 1-2 lemons
🥑1 tbsp olive oil or avocado oil
🌱2 tablespoons chopped fresh dill
🌱2 cloves garlic, finely chopped
Salt and freshly ground black pepper
👉🏼Boil pasta according to cooking instructions, rinse immediately with cold water.
Meanwhile whisk together the zest, juice, oil, dill, and garlic, then season with salt and pepper, to taste. Set aside.
Add pasta to a large bowl, stir in spinach followed by remaining ingredients and dressing. Stir VERY well to combine, cover and refrigerate for about 2 hours for the flavors to nicely combine. Enjoy cold! *You can always leave out the feta if desired!*
