Blueberry Yum Yum - The Makeover
✨As a child, a friend of mine's Mom used to make Blueberry Yum Yum and it was a dessert that I loved! And since it seemed as all American as they come, I thought this would be a perfect time to make it, the lighter version! What you need...
For the crust:
1 cup pecan pieces
1/4 cup coconut flour
1 tbsp. coconut oil
1 tbsp. honey
.
For the filling:
8oz. cream cheese, softened
1 tbsp. honey
1/2 tsp. vanilla
.
Topping:
1 pint blueberries, rinsed
the zest and juice

Cauliflower Rice Hack
We eat a ton of cauliflower, like I am regularly embarrassed at the stinch of cauliflower in the air! So here are a couple of cauliflower rice hacks! ;) Sometimes I use plain old cauliflower rice! It's simple to toss 2 bags of frozen cauliflower into a dish, add 1/4 cup of water, cover and steam for 10 minutes, then mash with a potato masher. Always allow the steam to rise off afterwards, so it doesn't get mushy! But that's it! And this is my go-to many times! Of course, now

Choose Your Own Adventure - An Attempt to Customize Lunches
Well, it's here. It's bittersweet as always; another Summer gone, Back to School, a grade older. I'm ready and then then not ready at all. No matter what you do, they are going to get some crap, community snack at school, treats for good behavior, birthdays and pretty much every other excuse to feed kids things that aren't healthy. My kids definitely get plenty of "non-preferred" food ;) ; however, I work really hard to get as much of the good stuff into them too! When they a

Cauli-Rice Stir Fry
This dish is honestly so simple it's kind of embarrassing! The other amazing thing about this is that you can use whatever veggie combo you want and many of these are available frozen or pre-chopped! Really anything goes! Other yummy veggies to consider: broccoli slaw, zucchini, broccoli, shredded brussels sprouts, even pineapple bits! This made enough for me & the hubs and left enough extra for lunch the next day! ;) What you need... 2 cups Riced / Steamed Cauliflower Olive

Getting Back On Track - On the Menu This Week!
I think I have Summered a little too much...well....A LOT too much! It's been one thing after the other the last month or 2 and it seems that every time I get it together, I drop it in the mud! Sometimes it's my fault for letting go, sometimes it's completely out of my control. All the planning and prep in the World can't possibly make up for life every time! I let it get the best of me and really beat myself up, but that doesn't solve anything! So, face forward, progress n

Red & Green Roll Ups
Red and Green Pork Tenderloin Yes, it is as good as it looks, might even be better! This is one of the most moist pork tenderloins I have ever had! The flavors are so wonderful together that all of my children ate all of theirs and asked for more, spinach and peppers included! It made the perfect amount for leftover lunch! If you aren't a fan of pork, you can always sub chicken breasts for this recipe, just make sure to buy cutlets or pound them nice and thin! ;) What you

Sunscreen Confusion?
Sunscreen is a very blurry topic when you begin to dig into the benefits vs. the risks and the question of true effectiveness. Considering some of the unquestionably unsafe things that the FDA approves, when they even say they have not reviewed the safety of sunscreens in more than 30 years and that the chemicals in sunscreens could pose more risk than the sun itself....ummmmm, that should tell us we need to be a little more informed before picking up the old Banana Boat! As

Slaw - 3 Ways
Slaw....sounds boring and drab right? Wrong! We eat slaw often, almost once a week! It's a great way to consume a variety of raw veggies and pairs well with SO many things! Ever had butternut squash slaw? It's a wonderful sweet and crunchy addition! I even throw a handful of spinach into mine most of the time to add some hearty green color!
