Italian Chopped Salad

Well...Happy New Year! It's been a while since I have blogged anything and I am so sorry that I have been MIA! Sometimes life throws you things that knock you off course and it's been a few months of those. I'm not much for talking about those deep down aches, but a few months ago I lost my best friend, my 14 year old sidekick, my Lab, my anchor and parts of me went with him. I think maybe he took a lot of my creativity with him or either I haven't been able to find the joy in it that I used to since my sous chef is no longer by my side. But, it's time to move forward and get back to creating healthy dishes to share! Lord knows that it's not just my heart that has suffered, my diet certainly hasn't been the same either! ;) So, here goes to getting back to clean eating and healthier habits! This is a good one to start with!

This was a time where cleaning out the fridge turned into something pretty spectacular! 🌈

I had several jars of pepperoncinis, bananas peppers and olives that were nearing empty and wanted to use them up, so I threw in a bunch of veggies, the juice of a lemon and a heavy helping of Primal Palate Amore Season and this deliciousness was born! 👌🏽

2 small zucchinis, run through the mandolin

1/2 red bell pepper, diced

1 can artichoke hearts, rinsed, drained and chopped

2 cups colorful cherry tomatoes, halved

handful fresh basil, chopped

1/2 radishes, chopped

2 cups iceberg lettuce, chopped

banana peppers

Kalamata olives

Pepperoncinis

1/2 cup uncured salami, chopped

1 tsp Amore Season

the juice of 1 lemon

I just used a large bowl, tossed it all in, mixed it up well and enjoy! This makes for a great large salad or smaller snack portions! It keeps well for about 2 days!
