I don’t usually do corn 🌽 but when Summer brings on big Weekend cookouts, you might as well upfit those leftovers and give them a second life! 😜
We entertained with a big cook out and tons of Summer Veggies this weekend. 🍅This salad is simply our veggie platter + leftover corn cut off the cob + a can of drained and rinsed black beans + onion + fresh cilantro with a good dash of Apple Cider Vinegar! Nothing Wasted!
What you Need...
1 pint Colorful Cherry Tomatoes
3 ears of Cooked Corn (mine was done in the Instant Pot 3 mins, but grilled works too)
1 can Black Beans, drained & Rinsed
1/4 Red Onion, minced
1/2 Red Bell Pepper, minced
1/2 Green Bell Pepper, Minced
Handful Fresh Cilantro, chopped
1-2 tbsp Apple Cider Vinegar
Dash of Black Pepper
Remove Corn from Cob. Add all ingredients into a bowl and toss well to combine. Chill until needed! Enjoy!
