Meal Prep Hash Hack


This Meal Prep Hack is definitely a tried and true go-to for me, especially if I am short on Meal Prep time! It's not only a one pan wonder, but always one of our favorites and versatile in so many ways! It only dirties 1 pan and 1 knife, works for for Breakfast, Lunch or Dinner; fits a Paleo, Whole 30 and Zone Diet lifestyle and is SO delish + easy! Not to mention it packs in so much nutritional goodness!

I whipped this batch up yesterday and used it this week for 8 snack servings - done in minutes and at the ready for grab and go this week! You could also use a larger portion for larger meals! If you follow Zone Portioning, this batch makes 8 x ~2 block snacks, 6 x ~3 block meals or 4 x ~4 block meals! Which is all pretty dang stellar in under 10 minutes, right???

What you need...

1 medium Sweet Potato

1 large Leek

1 small Vidalia or Sweet Onion

1 Red Bell Pepper

4 Cloves Garlic

2 packages Gilbert's Sausage (I use either Caprese or Early Bird Green Pepper & Onion to keep the sugar to a minimum)

3 cups Kale, chopped

Olive or Avocado Oil

Wash and chop the onion, leek and bell pepper. Mince the Garlic. Peel the Sweet Potato and chop into small pieces so that it softens easily. Add these veggies to a large state pan and drizzle with a little Olive Oil. Turn to medium high heat and cook for about 6 minutes, tossing a few times. Add 1 tbsp. of water and cover to allow the sweet potatoes to steam. Once the sweet potatoes begin to soften, add Kale and continue to cook until wilted through. Remove from heat and serve or portion into meal prep containers. If storing for later in the week, allow to cool completely before covering and storing in the fridge! Enjoy!!!
