That time when the only thing left from Sunday Meal Prep was Roasted Purple Sweet Potatoes but those Siete Cassava Chips were screaming from the pantry, which they just seem to do!

I love Happy Accidents, sometimes that's how you discover the very best things in life! This was one of those! I roast sweet potatoes every weekend, along with other veggies, so that I have some optimal carb options at the ready through the week. This week I had used these beautiful purples I found at Whole Foods, their festive color really made this pop!
What you need...
1 cup roasted sweet potatoes (peeled, cut into bite sized pieces, tossed with olive oil & roasted @425F for about 25 minutes)
1/2 avocado, diced
the juice of 1/2 lime
2 tbsp. purple onion, diced
1/3 cup sweet or hot peppers, diced (I used a mix of jalapeños & sweet red peppers)
small handful fresh cilantro, chopped
dash of cumin
dash of pink salt
Gently mix it all together and serve with your favorite chips!
