Chicken Souvlaki


Growing up my best friend was Greek. She literally has the Big Fat Greek Family that you see in the movies! The giant family with all the traditions, the food, the dancing, the festivals, the language, the love and all the fun! For years I wanted so badly to be Greek; I definitely think they are one of the reasons that I love Greek Flavors so much! So a huge Thank you to so many memories and so much Food Inspiration to my Stasios Family!

What you need...(Yield 5-6 skewers)

3 Chicken Breasts, sliced into chunks

Wooden or Metal Skewers

1 cup of Quality Plain Greek Yogurt

the juice of 2 lemons

1 tbsp. Virgin Olive Oil

1 tbsp. Quality Red Wine Vinegar

2 tbsp. each Fresh Chopped Oregano, Parsley & Rosemary

1/2 tsp Cumin

4 Cloves Garlic, mined

1 tsp Red Pepper Flakes

Tzatziki Sauce

Place chicken into a dish. Whisk together all marinade ingredients and pour oven chicken. Cover chicken and refrigerate for at least 4+ hours, ideally overnight. Remove chicken and place on skewers. If you are using wooden skewers, make sure to soak them in water prior to using so they don't burn. You can also add artichoke hearts to the skewers in between each piece of chicken! Grill on a hot grill about 10 minutes per side, making sure they reach an internal temp or 165F. I use a little digital thermometer just to be safe!

Alternately, you can bake these in an oven preheated to 425F for about 30 minutes, flipping halfway through!

We served 1 skewer each over a bed of Baby Spinach and Chopped Romaine, topped with Roasted Red Peppers, Artichoke Hearts, Pepperoncinis, Red Bell Peppers, Cucumbers, Cherry Tomatoes, Roasted Eggplant and a few Pine Nuts with a little Tazatsiki! The kids had a smaller version and pita points too!

Confession, for the Tzatziki Sauce I cheated this time! I was browsing for Inspiration at The Fresh Market and spotted this Le Grand Tzatziki and I had to try it! Loved it and will definitely buy again! ;)
