Vegan Sundried Tomato Pasta Salad

Not even kidding....the only bad thing about this is that there's more in the fridge and it winks at me every time I walk by! This pasta salad is light and bright with a little red pepper flake to kick you in the pants! SO good and so easy, the hardest part was chopping the herbs! ;)

What you need...
1 box Banza Rotini Noodles
1 can Artichoke Hearts, drained, rinsed, chopped
1 Handful (about 1/2 cup) of Smoked Sundried Tomatoes (California Sun Dry)
1/4 cup Kalamata Olives, Chopped
1 tbsp. Capers
1 tbsp. Pine Nuts

For the Dressing...
The Juice of 2 Lemons
1 tbsp Avocado or Olive Oil
Splash of ACV or Red Wine Vinegar
Handful of each, Fresh Parsley, Fresh Basil, Fresh Oregano
Chopped
2 cloves garlic, minced
Dash of Red Pepper Flakes
Whisk together to combine or add to a shaker cup/jar and shake well to combine
For the Pasta, bring a medium pot of water to a boil, add pasta to boiling water. Boil for about 6 minutes, removed drain and rinse with cold water. Meanwhile, add remaining ingredients to a large bowl, when pasta is ready add to bowl and toss with dressing!
