Spicy Sweet Potato Hash

You had me at Sweet Potato! ;) No...but seriously Sweet Potato is my Pumpkin Spice! I love all things sweet potato and honestly I think it paris well with everything, like salsa! BONUS: I LOVE a one pot/pan or in this case, skillet, meal! :) One pan almost always mans easy and much less clean up! Winner! This one is one we always go back to, especially when you want a warm breakfast or mini-meal! I find that when the temps begin to chill, we like more warm snacks and minis and this one is perfect! One skillet, about 10 minutes and you have enough for about 6 snacks or 3 good sized meals! Not to mention the warm and anti-inflammatory benefits of Ginger and Turmeric really give this meal a nice Zing!

PS This is a good one for Sunday Meal Prep for all the above reasons! ;)

What you need...

1 medium sweet potato, peeled and diced

1/2 red bell pepper, chopped

1/2 onion, chopped

~2 inch piece fresh ginger, chopped

drizzle of olive oil

1 lb. uncooked Chicken Sausage, removed from casing (Al Fresco)

2 links cooked Chicken Sausage, sliced into bite sized chunks (Gilbert's Caprese)

3-4 cups fresh spinach

dash of turmeric

Add first 4 ingredients to a skillet and turn to medium-high heat. Drizzle lightly with olive oil. Add in uncooked sausage removed from casing and sauté while mixing with a wooden spoon, breaking apart the sausage as it browns. Continue for about 6-7 minutes or until the sausage is coked through and the potatoes are fork tender. Add in sliced sausage , spinach and turmeric and continue to stir to combine as the spinach wilts! Serve warm or dish up into single serving containers. If packaging as snacks for later, allow to cool before covering and refrigerating! Enjoy!
