Taco Meatzza


Taco Tuesday!!!! My favorite day, well...sort of! ;) We observe every single week!

Taco Meatzza! It's like a Taco, without a shell, like a pizza on meat, like a platter of amazing nachos with ALL your favorites toppings and without any guilt!!!! And yes, it might be the Easiest thing I make! Press it in the pan, top it and bake! No rules, just right!

What you need... olive oil cooking spray 2 lb. ground turkey (you could always use grass feed beef if you want, turkey is just much leaner and works well) enchilada sauce (look for one does not have sugar in the ingredients) 1/2 cup shredded cheese

TOPPINGS!!! black beans (rinsed & drained) corn jalapeños can of diced tomatoes with peppers (drained) avocado olives fresh cilantro, chopped (I LOVE a ton) chopped baby spinach shredded lettuce salsa sour cream or greek yogurt ANY topping you like on your nachos works!!!!

Preheat oven to 400F. Spray a 9x13 pan with cooking spray, liberally; turkey is very lean and can stick! Turn your meat into the pan and press down to one thin, even layer. Bake for 25 minutes. Remove from oven, carefully drain the fat off and into a dish to cool. Allow meat to rest for 2-3 minutes to dry so the "crust" will hold together better! Spread enchilada sauce over the top, Sprinkle cheese over sauce, then pile on the toppings!!!! I like to put the tomatoes, beans and corn on first and then all the green things on top of that! No real reason I guess, probably just aesthetics! ;)

Return to oven and bake for 15 minutes. Remove and slice into squares, serve with shredded lettuce, salsa and sour cream, greek yogurt or guacamole!

You can make an amazing topping by whisking together a little greek yogurt, lime juice, fresh chopped cilantro and a couple dashes or Chipotle spice! ;)
