Simple Hawaiian Skewers

Simple Hawaiian Skewers -

What you need... pork tenderloin, marinaded, cut into 1-2 inch chunks (or chicken) 1 pineapple, cut into 1-2 inch cubes 1 red bell pepper, seeded and cut into squares

1 pint whole mushrooms, cleaned 1 purple onion, cut into chunks Preheat grill to medium-high heat, meanwhile chop all your veggies, pineapple and last pork. Add to skewers. Back Grill down to medium heat and grill skewers for about 20 minutes, turning everything 5 minutes! Enjoy! Marinade 1-2 tbsps. honey 1/3 cup balsamic vinegar 1/2 cup apple cider vinegar (I use a little Bragg's ACV for all it's health benefits - post coming soon!) 1/2+ cup dijon mustard (use more to thicken it up, I make it thick for BBQ) 1 tbsp. olive oil cayenne pepper or ancho chili powder (optional) Add the ingredients to a jar with a lid! Shake until well combined! Add more dijon for a thicker sauce if you like! Marinade for as little or as long as you can! If I am short on time I have let it sit for as little as 30 minutes; It's still good! Ideally, I pour it over the meat and refrigerate over night or for the day and grill up in the evening!
