Egg Roll Bowl - Whole 30

Egg Roll Bowls might be dominating our upcoming menu! 😜 I can't get enough of this one lately and all the nutrition it packs! With just a little bit of chopping and shredding + just about any available protein, this one only takes minutes and is amazing for SO many reasons! This is literally packed full of the healthiest veggies and herbs, making it full of fiber, vitamins and minerals = Nutrient Dense Magic! And those Wonder Noodles - Wonder Noodles literally make you feel like you are cheating, yet they are only 20 calories per bag and Vegan, Gluten Free, Non-GMO & Paleo and cook in 1 minute!

On Sunday I sliced up a red and green cabbage and store them in gallon sized Ziploc Freezer bags with as much of the air squeezed out as possible! Then washed a pound of Brussels Sprouts and pulsed them through the food processor a couple times to shred them up. Having these 3 things at the ready allows me to add these nutrient dense veggies to salads, stir fry, Egg Roll Bowls, anything! I always keep sliced onion and peppers ready in meal prep containers as well! This recipe is super versatile; you can add in whatever low glycemic veggies you have on hand and ANY protein works great in these! I always grill up some chicken and fish or shrimp to have on hand for the week! ;)

What you need...

Olive Oil or Coconut Oil

Sliced Red & Green Cabbage (I used a small handful of each for 1 Bowl)

2 cloves Garlic

1/4 cup sliced Leeks

Red Onion, sliced

1/2 cup shredded Brussels Sprouts

1 bag Wonder Noodles (Thrive Market) or Daikon Radish Noodles

Fresh Basil, Mint & Cilantro

Tbsp. Sliced Green Onions

Coconut Aminos

Yai's That Almond Sauce (Whole 30 - I buy it from Thrive Market)

3-4 oz. Your Choice of Fully Cooked Protein

Add Cabbage, Garlic & Red Onion to a sauté pan with a drizzle of Extra Virgin Olive Oil, Avocado Oil or Coconut Oil, cook on Medium-high for about 2 minutes. Once softened, add in a large handful of shredded Brussels Sprouts, continue to cook until wilted and warm. Toss in your choice of fully cooked protein to warm through (or serve it alongside). Deglaze the pan with a shot of Coconut Aminos and serve alongside Raw Daikon Radish Noodles or warmed Wonder Noodles. For the Wonder Noodles, drain and rinse well, then heat in a glass dish . Serve with a generous helping of Fresh Mint, Basil, Cilantro & Green Onion + a drizzle of Yai's Thai Almond Sauce. Enjoy!
