Pizza Casserole -Keto

2 of my kiddos ask for scrambled eggs practically everyday. They like Uncured Ham or Canadian Bacon chopped up in their eggs. A week or so ago, we were out of both, so I grabbed some uncured pepperoni instead and made us a batch of pepperoni eggs in the name of Keto! ;) They were such a hit, I thought I would try a casserole and this little baby was born!

What you need...

1 Dozen Eggs

8 oz. Organic Cream Cheese

Pizza Toppings

Uncured Pepperoni

Sausage Crumbles

Mushrooms

Onions

Peppers

Olives

Roma Tomatoes

Artichokes Hearts

Lightly grease a 9x13 glass dish

Preheat oven to 400F

Whisk Cream cheese and eggs to combine. I used my food processor to whip mine! Pour into 9x13 Glass dish and place in the oven on the center rack.

Bake Casserole until slightly set, about 15 minutes. Remove from oven and add toppings. We used a little bit of shredded cheese, Nitrate Free Uncured Pepperoni (Applegate), a little leftover Butcher Box Pastured Pork Breakfast Sausage, Mushrooms and Green Peppers. Sprinkle with a little Italian Season. Then return to oven until completely set, about 15 more minutes. We served this up on a bed of wilted lettuce with fresh basil and green onions! The fresh Basil adds huge flavor!! It will not disappoint!
