Chicken Taco Bowls

Lately we have been really trying to stick hard to low glycemic carbs, especially during the week! I confess, I have splurged a little on the weekends, but have been pretty dang vigilant during the week! And it feels good! I am seeing and feeling some great changes from this slight restriction, not to mention really enjoying all the raw freshness! Think your water based, non-starchy veggies and lots of greens!

This is one mini meal that I have been making a day or 2 in advance that has really been a big hit for me and the hubs! And....it's pretty simple! This little bowl is packed full of healthy fats, lean protein and big flavor, making it a huge favorite!

Slowcooker Shredded Chicken is often a go-to for me, because you can pop it in the slow cooker and let it do it's thing. After about 2.5-3 hours, it shreds easily with tongs and works great in tacos, enchiladas, chicken salads, simple snacks and even over salad!

Here I used 3 oz. of Shredded Chicken + 1.5 oz of Avocado + 1/4 cup Pico de Gallo (or Salsa) + a handful of black olives for a fantastic at the ready Ketogenic or Low Glycemic & High Protein Mini Meal or Lunch! Squeeze a little lime on the Avocado to keep it from browning if you makes these a couple days ahead! ;)
