💚Simple Chipotle Lime Salmon!
This Spicy Salmon is so easy and so over the top amazing, but the best part is it’s only 3 ingredients and about 20 minutes to the table! 😉
Whisk a couple tablespoons Primal Kitchen Chipotle Lime Avocado Oil Mayo (Paleo & Dairy Free) with the juice of half a lime. Lightly spray a glass baking dish with Avocado Oil Cooking Spray and place Salmon Filets skin side down into the dish. Spread the Chipotle mixture on the top of the Salmon Filets, an extra dash of Cayenne is optional 😜
Bake at 400F for about 20 minutes or until opaque in the center!
We enjoyed over zucchini & squash ribbons Sautéed in ghee for about 2 minutes then finished with 2 tbsp coconut milk and a handful of cherry tomatoes! Salt & Pepper to taste!
If you'd like to add a little crunch, you can sprinkle the tops of the Salmon with crushed Simple Mills Crackers or the crumbles from the bottom of the Late July Quinoa & Chia chips bag!
Mom Hack - The kiddos LOVE this dish also. I sub in regular Avocado Oil Mayo, mix with about 1/4 cup parmesan cheese, the juice of 1/2 lemon, spread and bake! They literally request it regularly!
