Almost Eggs Benedict

Okay....so it really isn't Eggs Benedict because there is no Hollandaise, but I think it was pretty dang good! Works for me! ;)

I love my shakes for breakfast! They are quick, easy, packed with super nutrients and plenty of protein to keep me going for a while, but when it's cold, I really like to warm up with a hot meal!

I used baked sweet potatoes cooked up in my instant pot over the weekend, roasted asparagus from my Sunday Meal Prep, paired them with a slice of Nitrate Free Canadian Bacon and 2 Poached Eggs!

SO, I must give credit to my friend Heather Barritt for teaching me this Perfect Poach method that I use all the time! Simply grab a glass vessel, I use a pyrex measuring cup. Add 1/2 cup of water, a splash of Vinegar ( I use ACV, I think she uses white vinegar) then crack an egg into it! Microwave for 1 minute for a runny yolk, or 1.10 for a little less run! Boom, that's it! Awesome Sauce, right? Then I plated and hit it all with a little Primal Palate Meat and Potatoes Season, you could use Chipotle too! And Breakfast is served, all in about 5 minutes!
