Kale Salad with 2 Twists one of my weaknesses used to be the hot lunch buffet at Whole Foods. But...I'm not a millionaire and I can't afford the calories you can pack in by hitting that amazingness regularly either. So, I set out to makeover a couple of my favorite healthy dishes from that buffet!

They have a Garlicky Kale Salad with Parmesan that is AMAZING! So I cut the Parmesan and made my own little Vegan Dressing for that one! But they also have a lovely, crispy one with apples; hence the Tangy dressing option! Either way you go, all you have to do is grab a large bowl, whip up your choice of dressing, massage away! Once your Kale is slightly wilted and lightly covered in dressing, toss in those apples and cranberries and store, covered in the fridge until you are ready! Ideally a few hours! ;)

What you need...

6-8 cups Kale roughly chopped, stems removed (I bought it that way)

1/3 cup Dried Cranberries

1 small Organic Apple, sliced into bite sized pieces

Dressing Options

Sweet & Tangy

1/4 Primal Kitchen Avocado Mayo, Quality Mayo or Veganaise

2 tsp. ACV

2 tsp. Quality Honey

Whisk Together!

Garlic Tahini

2 tbsp. Lemon Juice

2 tbsp. Coconut Aminos

2 tbsp. Vegan Tahini

2 tbsp. ACV

4-5 Cloves Roasted Garlic

Blend in a single serve blender cup!
