🌱Superfood Stuffed Sweet Potato🌱
 

🍠Pressure Cooked Sweet Potato filled with Wilted Spinach, Hemp Seeds and Raw Pumpkin Seeds, with Fresh Parsley & Thyme for an Herb and Flavor Pop!

I simply steamed a small sweet potato, sliced it open and scooped out the meat. Mixed the meat with wilted spinach, the pumpkin and hemp seeds, stuffed in back into the potato (optional) top with fresh herbs! Sauteed Mushrooms and Onions make an AMAZING addition as well! ;)

 

If you have an Instant Pot, it is a fabulous way to "bake" or Steam Sweet Potatoes in a jiffy, but what's more is the method for cooking and how well it maintains the nutrients in your food without stripping those out like some methods for cooking can do! Not to mention, this doesn't require long bake times, foil or anything additional. 

.

Just add 1/2 water to the Instant Pot, place the potato (s) in a steamer basket, close the nozzle and press manual to select a 16 minute Pressure Cook. I like to use the 10 minute Natural Release for these to make sure they are perfect!
