Cranberry Walnut Chicken Salad

Talk about SIMPLE??? Simple ingredients, Simple to toss together, zero work AT ALL! But BIG flavor! Honestly, I cannot keep myself out of this Chicken Salad! It's Fall in a bowl! I think it might be one of the Top 3 reasons my husband proposed 10 years ago! ;) It's THAT good!

What you need...

3 cups Shredded Chicken (about 3 breasts)

1/3 cup Dried Cranberries (look for ones without sugar added)

1/4 cup Walnut pieces

2 oz. Goat Cheese Crumbles (optional)

Handful of Fresh Parsley, Chopped

I popped my 3 chicken breasts into my slow cooker and hit go for 3 hours, then shredded with tongs. Stir in remaining ingredients and mix in Dressing until desired consistency!

You have 2 options here->

Make your own: (Fat Free)

1 tbsp Honey 2 tbsp Balsamic Vinegar 1 tbsp Bragg ACV 2 tbsp Dijon Mustard

Whisk together and stir into Chicken Salad until desired consistency.

OR

This week I cheated and used about 1/3 cup of Primal Kitchen Balsamic Vinaigrette, which is PALEO, made with Avocado Oil and is delicious! I get that from Whole Foods or Thrive Market! Cheers y'all! Happy Fall!
