Apple Sweet Potato Breakfast Hash

I’m #fallinghard for Fall Flavors right now! 💜 . Toasting to Meal Prep with this little Gem this morning! Every time I sit down with an amazing, lunch or snack at the ready, with zero prep, it makes me smile! All Moms need that little bit of pride and time for an extra ahhh in their day!

I whipped up 4 servings of this colorful Breakfast Hash with Apples, Onions, Purple Sweet Potatoes, Baby Spinach & Gilbert’s New Early Bird Maple Brown Sugar Chicken Sausage in minutes, during my Sunday Meal Prep! Now all that’s left is that minute to breathe and enjoy it! Time in, ahhhh back! 😜 .

What you need...

1 Sweet Potato ( I used Purple), peeled and cut into bite sized pieces

1/2 Sweet Onion, roughly chopped

Drizzle of Virgin Olive Oil

1 Medium Apple, cut into matchstix

5oz. Clamshell of Baby Spinach

2 links Maple Breakfast Sausage (I used Gilbert's Chicken Sausage)

Add onion and sweet potato to a large skillet, drizzle with olive oil and sauté on medium heat for about 7 minutes, tossing frequently. Add in apples and continue to sauté for 3 minutes or until the Sweet Potatoes become tender. Add in the Sausage and Spinach and toss until the spinach is wilted and the Sausage is warmed through! Serve or portion into small glass containers, allow to cool completely and refrigerate for up to 3 days!
