Almond Crusted Chicken Tenders - Paleo

Paleo Almond Crusted Chicken Tenders!

This is my 👦🏻👧🏻👧🏻👧🏻absolute Favorite dinner next to pizza!!! And I have to admit, they are Top 5 for me as well 😜 . 👉🏼These are super simple to make with only a handful of ingredients, just set yourself up an assembly line and go! See Video Below . 😉They are also make ahead friendly, just cover and refrigerate until dinner time then all you have to do is pop them in the oven! . Last night we simply had them over greens with apples and Primal Kitchen Foods Paleo Honey Mustard Vinaigrette, which is out of this work! But the kiddos love them with a Simple Honey Mustard Dip, that is honestly drinkable! ;)

What you need...

2-3 lbs. chicken breasts cut into chunks

Breading

~2 cups Almond Flour

A handful of Almonds, run through the processor

1/2 tsp Black Pepper

1/2 tsp Pink Salt

Egg Bath

2 eggs

1/4 cup milk or almond milk

2 tbsp. dijon

Large Baking sheet lined with parchment paper

Begin by Mixing your egg bath ingredients together in a small dish. Combine your Breading ingredients together and place on a large plate for easy breading. I like to set up an assembly line and just go through it quickly. First dip each chicken chunks into the Egg Wash, using tongs, then dredge it into the Almond Mixture making sure to coat well, place each piece onto the parchment lined baking sheet. Continue until all is done.

Now, you can cover and store in the fridge until dinner or preheat to 400F. Once preheat, spray the tenders with a little Avocado or Olive Oil cooking spray for a nice crust and place into the oven. Bake for about 15 minutes, then GENTLY flip, I like to use tongs to do this rather than a spatula! Bake for about 10 more minutes or until golden brown and internal temperature of 165F is reached! These pari nicely with SO many things! Enjoy!
