Coconut Cauliflower Arepa w/ Fresh Pico & Black Bean Hummus
We enjoyed an amazing dining experience this past weekend and it really got my juices flowing! So today, I whipped up this delightful little afternoon snack and it did not disappoint! Beautiful flavor combination with so much fresh goodness!

I made a batch of the Arepas & the Pico during my Sunday Prep, so putting this little gem together took less than a minute! ;)
What you need...
1 Coconut Cauliflower Arepa (see below)
Black Bean Hummus- I used Roots which is my absolute favorite (Whole Foods carries)
Fresh Pico mixed with 1/4 cup Black Beans
Sliced Avocado

I warmed the Arepa gently, spread the hummus on, topped with Black Bean Pico, sliced Avocado on the side and a bit more Hummus on the tip top! ;)

For the Arepas (yield 8-10)
3 cups Riced Cauliflower, steamed (I bought frozen)
3/4 cup Coconut Flour
2 Eggs

Steam the Cauliflower, then pour out onto a baking sheet lined with several paper towels or a kitchen towel. Allow to cool. When cooled completely, add to a bowl, combine with Coconut Flour & Eggs. Mix well. Preheat oven to 425F & Line a baking sheet with parchment. Gently patty out each Arepa, as you would a hamburger. Bake for about 20 minutes, then flip and bake for about 10 more minutes. When they are golden and set, remove and cool. When cooled completely, they keep nicely in a sealed, refrigerator container for 3-4 days.
