Slowcooker Chicken Pot Pie


When Fall rolls around, schedules are busy, and you start craving those Crockpot Comfort Foods....my Slowcooker lives on my counter!

So...thus far the Temperatures have not yet gotten the message that Fall is in the Air, but my Slowcooker has and it has been hard at work the last couple weeks! ;) All Moms love a crockpot meal, zero work, at the ready, crowd pleaser. Well, this one might be the easiest of them all! And, it makes plenty for my family of 6 with a little leftover for lunch!

What you need...

3-4 Chicken Breasts

1 Bag Frozen Peas & Carrots

1 Small Onion, chopped

1 tsp black pepper

2-3 Sprigs of Each, Thyme, Rosemary + 2 Bay Leaves Tied into a Bundle with Kitchen Twine

Place Chicken Breasts into the Slowcooker, Add in Peas, Carrots, Onion. Sprinkle with Pepper, Place Herb Bundle on top, cover and turn to high for 3.5 hours. Shred Chicken, allow to cook for remaining 30 minutes uncovered to reduce any extra liquid. Serve hot with a warm Cauliflower Bun on top!
