Paleo Lobster Bisque

💛I have always loved the way Lobster and Butternut Squash compliment one another! Throw in a beautiful bundle of herbs and some coconut milk, a few clams for good measure, put a quick pressure cook on it and pouf, in 20ish minutes you can curl up with a bowl of Ahhh-mazing!

Lobster Bisque - with no dairy, no gluten and it all starts with a Butternut Sqash? Yep...you heard me! And it is SO good!

PS, you can always sub crab meat or shrimp in this! When I'm craving this I just keep my eyes out for a good sale on one or the other. Costco usually has good deals on Lump Crabmeat too!

But here's the True Beauty of this Soup - it's totally versatile! If you don't like Seafood, or want to keep costs down, make the soup itself, then add in shredded chicken or sausage! I made this with a little leftover Chicken broth in place of the clam juice and added a package of Gilbert's Caprese Sausage! It was amazing, the sausage was already fully cooked, so it was ready in about 20 minutes! Make it your own!

What you need...

2-3 slices of Nitrate Free Bacon, chopped into bite sized pieces

1/2 Onion, chopped

3 Cloves Garlic, chopped

1 Butternut Squash, peeled and chopped into bite sized cubes

1 can Coconut Milk

2 cans Clams in Clam Juice (reserve juice)

3 small Lobster tails, shells removed, cut into bite sized pieces

dash of Cayenne Pepper

dash of Chipotle Pepper

2 stems Fresh Thyme

2 stems Fresh Oregano

2 Bay Leaves

Add bacon to the Instant Pot and press sauté. Sauté bacon, tossing until browned, about 5 mins. Add in the onion and garlic, sauté for 1-2 mins. Meanwhile, Drain clams using a strainer, reserve the juice and rinse the clams. Once onions become slightly translucent, add clam juice to the Instant Pot to deglaze and scrape bits from bottom of pot using a wooden spoon. Add butternut squash and stir to combine. Place lid on Instant Pot, turn nozzle to sealed position and press manual to pressure cook for 15 minutes. Once complete, carefully release the pressure, stir in coconut milk and add all remaining ingredients. Turn Instant Pot to Slowcook Option and replace lid. Allow to cook about 10 minutes or until Lobster is cooked through and opaque. I let mine roll for about 30 minutes and served over a bed of wilted spinach in each bowl!
