Simple Sunday Prep Snack!
Every Sunday I roast up a huge pan or 2 full of veggies. It could not be any easier, just chopped veggies drizzled with olive oil and roasted at 425 for about 25 minutes or until they are fork tender!
I keep them on hand to pair up with lean proteins and create quick, delicious mini-meals or snacks in minutes! It's the answer to macro balanced snacks and getting in great nutrients on the run!
I switch up my veggies all the time, but Brussels Sprouts and Sweet Potatoes are an every single Sunday item for me, because they are my favorite, they pair well with most proteins and they provide the perfect post workout carb!
This one is quite simply a handful of each, paired with a Gilbert's Smoked Gouda Chicken Sausage, sliced and warmed!
These sausages are a huge go-to for us because they are nitrate free, fully cooked, absolutely delish and available in several different flavors! They come in an individual perforated pack, so I can have one flavor and the hubs can have another, no packages left half eaten! ;) 1 link is the perfect protein macro amount for a minimal too!
