This was one of those happy incidences! It was Friday morning, post workout and there was little left in the fridge from my Meal Prep, so I basically emptied it all into one bowl and BAM this was born! And yes, I make homemade Pico and Guacamole Every Single Weekend, because, well....the Micro & Macronutrient Benefits are almost as endless as the Amazing Flavor Pairs! ;)
So darn good, we had the dinner version a few days later!
I have been obsessed with the Frozen Riced Cauliflower! It's already riced and cooks up in a covered dish in a couple of minutes! And it goes with EVERYTHING!!!! Plus it's rich with so many amazing health benefits and as far as veggies go, has a fair amount of protein too!
What you need...(mini meal portion, double this for a lunch or dinner)
3/4 cup riced cauliflower, cooked
1/3 cup black beans
1/3 cup roasted sweet potatoes
Nice Drizzle of Enchilada Sauce (Frontera)
Stir it all together and heat, serve it up with a side of salsa and guacamole - > My Recipes for Those Here
