THIS could not possibly be easier! Family Favorite and Busy night alert here!!!!

What you need...

olive oil cooking spray 2 lb. ground turkey (you could always use grass feed beef if you want, turkey is just much leaner and works well) enchilada sauce (look for one does not have sugar in the ingredients) 1/2 cup shredded cheese TOPPINGS!!! black beans (rinsed & drained) corn jalapeños can of diced tomatoes with peppers (drained) avocado olives fresh cilantro, chopped (I LOVE a ton) chopped baby spinach shredded lettuce salsa sour cream or greek yogurt ANY topping you like on your nachos works!!!! Preheat oven to 400F. Spray a 9x13 pan with cooking spray, liberally; turkey is very lean and can stick! Turn your meat into the pan and press down to one thin, even layer. Bake for 25 minutes. Remove from oven and spread enchilada sauce over the top. Sprinkle cheese over sauce, then pile on the toppings!!!! I like to put the tomatoes, beans and corn on first and then all the green things on top of that! No real reason I guess, probably just aesthetics! ;) Return to oven and bake for 15 minutes. Remove and slice into squares, serve with shredded lettuce, salsa and sour cream or greek yogurt!!!
