It always amazes me how the simplest combinations can be the most beautiful and the most enjoyable! This pretty little Rainbow Bowl (my am snack today) is simply some Roasted Peppers, Onions and Mushrooms from Sunday Prep, paired with a link of Gilbert's Aloha Chicken Sausage!
I always packed snacks that will be reheated in glassware rather than plastics. One little sheet pan of roasted veggies tossed with olive oil and we have 6 of these in the fridge for grab and go this week! These are also perfectly paired with Sautéed Ground Turkey or Shredded Chicken for a little Fajita Action! For a Breakfast or Lunch, just double your quantities; also wonderful over a little cauliflower rice!
