Zucchini Lasagna


Super Simple Pastaless Lasagna 😉 7 ingredient Success! . We're playing rock, paper, scissors ✂️ for the leftovers! 😂 . 🧀It's a bit of a dairy splurge for my norm, but veggie packed and well worth it! Doesn't everyone like to curl up with a hot bowl of goodness when Fall is on the way!?

🍝 I mixed up this Meat Sauce yesterday to use in Lasagna and GF Spaghetti w/ Meat Sauce for the kiddos! Y'all...no excuses here...I browned up 2 lbs. of Ground Turkey on high in a large skillet, then added 1.5 jars of Organic Marinara 👉 Reduce to simmer for about 30 minutes. Use immediately, store in airtight container in the fridge for up to 4 days or Freeze! Frozen Meat Sauce is Amazeballs in the Pressure Cooker too!

Lasagna - What You Need...

.

3-4 cups Meat Sauce

15 oz. Ricotta Cheese

1 Egg

1 bag frozen chopped spinach, thawed and well drained

3-4 Zucchini, washed and sliced

Cooking Spray

3/4 Cup Shredded Cheese of Choice .

Add ricotta , egg and spinach to a small bowl and mix well to combine. Lightly coat a 9x13 dish with cooking spray. Spread ~1 cup of Meat sauce across the bottom of the pan, top with a layer of zucchini slices. I like to cut mine to fit the width of the dish. Spread on a layer of the Ricotta Mixture, then repeat layers. Add a final layer of Meat Sauce and sprinkle with cheese. Cover gently with foil and bake @ 425F for 45 minutes, uncover and finish for an additional 15 minutes. Serve warm!
