Paleo Baby Back Ribs in the Pressure Cooker

Pressure Cooker Baby Back Ribs - Fall off the bone tender in 25 minutes!!!!

I have been making my same exact baby back ribs recipe FOREVER! Before I knew better, I used store bought sauce filled with nasty stuff, now I make my own Paleo Version, but the method for super tender ribs has never changed....until this past weekend!

I tested ribs in the pressure cooker and Holy Cow - I was VERY impressed They were steamed to perfection, tender as can be and that fat drained right off and into the bottom of the pressure cooker! Once they were done in there, I topped with sauce and finished in the oven for about 10 minutes! SO EASY!

What you need...

1 rack baby back pork ribs

Paleo BBQ Sauce 1/3 cup dijon mustard 2 tbsp. balsamic vinegar 2 tbsp. cider vinegar 1 tbsp. honey

1/2 tsp. ancho chili powder (or more if you like)

Add sauce ingredients to a jar and shake it up until well combined, or add to a dish and whisk! Refrigerate until needed.

Rinse and dry ribs, cut them into 2-bone sections. Add a metal steamer basket to the bottom of your pressure cooker, pour in 1 1/2 cups water, add ribs meat side up to the basket. Place top of Pressure cooker on, close steamer valve, press manual and set to 25 minutes. Pressure cook for 25 minutes, it will then beep and go to keep warm. Allow natural release for 10 minutes. Carefully open vent to release the remaining pressure. Using tongs, transfer rib to an oven pan, brush heavily with sauce, add to 400F oven on top rack for 10 minutes! Enjoy!

*Yesterday I did these for company and did 2 full pots, 3 racks, back to back in about an hour! I just add the first batch to a pan, sauced and covered and add to a Keep Warm oven while the others cooked, then finished them altogether in the oven! Fall off the bone tender with much less time and effort! ;)
