Cauli-Rice Stir Fry


This dish is honestly so simple it's kind of embarrassing! The other amazing thing about this is that you can use whatever veggie combo you want and many of these are available frozen or pre-chopped! Really anything goes!

Other yummy veggies to consider: broccoli slaw, zucchini, broccoli, shredded brussels sprouts, even pineapple bits!

This made enough for me & the hubs and left enough extra for lunch the next day! ;)

What you need...

2 cups Riced / Steamed Cauliflower

Olive Oil

Onion, Chopped

Bell Pepper, chopped

Sliced Mushrooms

Shredded Carrots (purchased shredded)

Frozen Peas

Fresh Ginger, chopped

Sliced Cabbage

1 egg + 1 egg white or 2 eggs

1 tbsp. Coconut Aminos

Grilled Chicken Sharwarma (optional)

Handful crushed cashews (optional)

Add veggies to a saute pan, drizzle with olive oil and sauté for about 4 minutes on medium/high tossing a few times. Add in cauliflower rice and continue to sauté for about 3 minutes tossing to combine. Add in Coconut Aminos and stir well to combine. Using your wooden spoon make a little well right in the middle of the pan, moving the "rice" out towards the edges. Pour your eggs into the well in the center, allow to cook for about 30 seconds then stir them into the mixture unit they are cooked through. Remove rice from pan and serve as is or with your choice of protein topped with crushed cashews!

Shrimp would be great with this as well! You could add them with the rice and follow the rest of the recipe! ;)

-Grill Chicken

I used my own cauliflower rice, which I make by roasting cauliflower along with onion, garlic & mushroom drizzled with olive oil. When it is fork tender, (about 30 minutes on 425F) I remove from oven, allow to cool and run through the food processor! It keeps in a sealed container for a few days and also works perfectly to replace Grits in Shrimp & Grits! ;)
