🦀Paleo Crab Cakes🦀
Seafood Slimdown Recipe! This one is also fabulous over Smokey Slaw!! 😉
Too many recipes too often use superfluous ingredients that are not necessary for an amazing meal! This is the perfect example no breading necessary and now these are simply baked, not fried! Score!!!!!
1/2 cup baked/mashed sweet potato
🌶1/4 cup diced red bell pepper
🦀1/4 cup diced onion
🦀3 garlic cloves, minced
2 tbsp parsley, chopped
🦀 dash of ancho chili powder & paprika
🦀8 oz Crab Claw or Backfin (picked through)
🦀8 oz Lump Crab Meat
Mix first 8 ingredients together until well combined. Gently fold in the lump Crab meat.
Lightly spray jumbo silicone muffin cups. Scoop 1/3 cup crab mixture into each muffin cup and press firmly. Spray tops lightly with coconut oil. Bake at 400F for about 20 minutes or until golden. Allow to cool ~2 minutes, gently invert cups to release Crab Cakes!
Serve with chipotle aioli!

AND....if that's not awesome enough, I used the same exact recipe as stuffing for a few butterflied shrimp! Simply baked along with the crab cakes! ;)
