Beetle Bug Stew

☀️It's a beautiful day to spend with some pretty special people! Perfect day to clean out the freezer, toss it all into the Slowcooker and go play! ❤️️ . There's no wrong way to make "Beetle Bug Stew" 🐞 Yes, you read that right! I started making this vegetable beef stew in the slow cooker when my son was 1 and I was pregnant with the girls. I was trying to get more veggies in my diet, but he was quite unsure. So...we told him that each item in this was some type of bug or wing and he cleaned his bowl. So of course the name stuck!

Today I used all frozen veggies in an effort to clean out the freezer AND free up my time, so it was a little different from my norm, but really anything goes!😉 . London broil, cut into cubes 1 bag frozen lima beans 1 bag frozen squash 1 bag frozen carrots 1 24 oz. can Fire Roasted Tomatoes 1 small can tomato paste 1 bag frozen onion 1 sweet potato, peeled and chopped into bite sized chunks 1 cup water 1 tsp dried sage 2 stems of each, thyme, rosemary, oregano + bay leaves tied into a bundle 1 tsp black pepper *salt to taste . Plug and Play on High for 6 hours! Remove Herb bundle and serve! .
