Roasted Purple Fingerlings with Lemon

I have never met a potato I didn't love! Always a weakness of mine...
We don't eat many potatoes these days, starchy carbs are not a staple! However, sweet potatoes and purple fingerlings are a bit different! They were considered a delicacy in ancient Peru because of their gemlike color, which makes any dish lovely!!! But that rich color comes from the particular antioxidants it's packed with, which have been linked to anti-cancer properties and added to the high levels of potassium, can aid in lowering blood pressure! These beauties are fabulous in simple recipes making them a great choice for a tuber! Look for them in little mixed sacks and remember these babies are stored in the fridge!
Here is a Simple Side packed with potassium, antioxidants, beta-carotene, the anti-inflammatory benefits of Rosemary! 
For a truly Mind-Blowing Experience, Roast these Purple Gems at 425F until crisp and tender, sliced in half and tossed with chopped garlic and olive oil, then top with lemon dressing:

🍋Zest & Juice of 2 lemons
2 tbsp. olive oil
1 tbsp. fresh chopped Parlsey
cracked pepper
👉🏼this dressing is fabulous over roasted asparagus as well!
