Southwestern Sausage Egg Skillet

This was me jonesing for Hot Spicy Snacks and needing to clean out the fridge! But a Big WIN! Have it for breakfast, lunch or dinner! I divided into 6 snack portions to have at the ready for Hot snacks this Cold week! Enjoy!

Taco Tuesday Sausage Egg Skillet What you need... 🌶1 package nitrate free chicken sausage, removed from casing - (20 oz. Al Fresco Sweet Pepper Sausage OR 20oz. Ground Turkey) 🌶1 red bell pepper, chopped 🌶1 orange bell pepper, chopped (or green pepper) 🌶1 sweet onion, chopped 🌶6 eggs 🌶1 cup cherry tomatoes, halved hefty handful fresh cilantro, chopped 🌶 1 tsp ancho chili powder
Add sausage to a large skillet, turn to medium heat and begin to brown while breaking it apart with a wooden spoon. Cook for about 4 minutes then add chopped onion & peppers and continue to cook until sausage is crumbled and cooked through, about 5 more minutes. Add eggs & ancho chili powder, continue cooking and stir to combine as the eggs cook through. Turn off the heat, sprinkle in the cherry tomatoes and top with cilantro! Serve!!!! Add cheese if you like!
