Taco Skillet

🌮Taco Tuesday is my FAVORITE! I love all things Mexican, Tex-Mex, etc! This one is one of my favorites for several reasons!

#1 It's a one pan wonder! Zero cleanup!

#2 It's super easy

#3 The whole family Loves it

#4 If there are any leftovers, they make an amazing mini-meal

#5 It is also great as a dip for parties

#6 It's SOOOO good!

#7 The vegetarian version is just as good, simply sub 2-3 cups of cooked quinoa in place of the ground turkey!

Turkey Taco Skillet 1 lb. ground turkey olive oil 1 onion, chopped 1 red bell pepper, chopped 3 cloves garlic, chopped 1/2 tsp ancho chili powder 1 can black beans, rinsed & drained (optional) 1/4 cup shredded cheese of choice 1 avocado, sliced 1/3 cup+ cilantro, chopped 1 stalk green onions, chopped 1 jalapeño, cored and chopped *optional tomato, shredded lettuce, sour cream or greek yogurt

Add turkey, onion, bell pepper, garlic to a saute pan, drizzle with a little olive oil and turn to medium high heat. Cook while breaking apart and tossing until turkey is cooked through, about 10 minutes. Add beans and continue to cook and stir for about 2 mins. Turn off heat, add remaining ingredients, allow cheese to get melty and serve! Top with shredded lettuce, fresh tomatoes or sour cream!

PS - the leftovers are the 💥 stuffed into a pepper and baked OR this can make a Kick@$$ Gametime Dip with "chips" of your choice!!! We love to use Bell Pepper Slices as Dippers!
