Cauliflower Carnival Rice
This recipe is one of my Top 3 Viewed Recipes over the last 6 years. It first appeared on my old blog! All those colors are why I call it Carnival Rice! Truly Simple Amazingness, packed with so much low glycemic nutrition! It is one of my husband's favorite dinners; he even asks for it as his birthday meal, so that should tell you it's really a delish mix! I think it's the light and tangy flavors and the brightness that the lemon and fresh dill add!

This Bright Veggie mix pairs well with Blackened Fish, Grilled Chicken, SautΓ©ed Shrimp or even White Beans! It's easy to adjust this to fit any diet from Vegan to Pescatarian or Paleo! π¦Paired here with Shrimp SautΓ©ed in Grassfed Butter, Garlic & Fresh Dill, deglazed with a little Fresh Lemon Juice. What you need...
-Avocado or Olive Oil of Choice -3 cups Frozen Riced Cauliflower (I used Green Giant) -1 cup Mixed Bell Peppers, roughly chopped (I use red, yellow & orange for extra color) -1/4 red onion, diced -1/4 cup Kalamata Olives, chopped -1/3 cup feta cheese, optional
-Fresh Dill, chopped
Add Cauliflower Rice to a Glass dish with lid and defrost in the microwave for about 5 minutes. Set aside, uncooked to allow any steam to rise off. Add a drizzle of oil to a sautΓ© skillet, enough to lightly coat the pan. Add in peppers & onion and sautΓ© on medium-high heat for about 3 minutes, tossing as they cook until softened. Stir in Cauliflower Rice and continue to cook, tossing occasionally until warmed through, about 2 minutes. Add in Olives, Fresh Dill, optional Feta Cheese and Dressing and toss well to combine! Top with your Choice of Protein! Enjoy For the Dressing... 1/3 cup lemon juice - the juice of 2 lemons the zest of 1-2 lemons 1 tbsp olive oil or avocado oil 2 tablespoons chopped fresh dill 2 cloves garlic, finely chopped Salt and freshly ground black pepper
Whisk together the zest, juice, oil, dill, and garlic, then season with salt and pepper, to taste. Set aside.
*I like to use a clean jar to shake up my dressing. I also like Primal Kitchen Foods Lemon & Turmeric Dressing (Whole Foods or Thrive Market) for this! It works great and adds another layer of anti-inflammatory, just add dill to it! ;)
