Butternut Squash Veggie Chili

👉🏼After watching a couple of documentaries about food quality and GMOs lately, I have been reducing the amount of meat we typically eat, and replacing some of it with healthy vegetarian meals. This one is so fantastic that I didn't miss the meat at all! And EASY peasy too! . What you need... 1 butternut squash, peeled and chopped into small cubes 1/2 sweet onion, chopped 1 red bell pepper, chopped (I only had an orange so I used it)

3 garlic cloves, chopped 2 cans black beans, drained and rinsed 1 can dark kidney beans, drained and rinsed 2 cans fire roasted tomatoes, with sauce 2-3 chipotle peppers in adobo sauce, chopped or 1 tsp crushed chipotle chilis 1 tsp cumin 1/2 tsp salt 2 cups veggie broth . Toss everything into a crock-pot, stir to combine and cook on high for 4 hours! Serve! .
