Chipotle Chicken and Cauliflower Rice Bowl

🔥Chipotle Chicken & Cauliflower Rice "Bowl" w/ Avocado Vinaigrette and let me tell you....It way AHHHHH-mazing!!!! 🔥

👉🏼What you need...2 servings

 
4-6 oz grilled chipotle chicken, cut into bite sized pieces
~3 cups cauliflower rice
1/2 cup black beans, rinsed & drained
1 cup shredded romaine lettuce
1/2 cup cherry tomatoes, halved
1/2 avocado, cut into pieces
1/4 cup shredded cheese
Green onions, chopped
Fresh Cilantro, chopped

👉🏼Spread out your warm cauliflower rice, divide each additional topping in half ➡️half for each "bowl", top with fresh cilantro & green onions and drizzle with Avocado Vinaigrette! Enjoy!

Marinade for Chicken
1/3 cup balsamic vinegar
1/2 cup apple cider vinegar (I use a little Bragg's ACV for all it's health benefits - post coming soon!)
1/2+ cup dijon mustard (use more to thicken it up, I make it thick for BBQ)
1-2 chipotle in adobo w/ a bit of sauce

👉🏼Whisk together and pour over chicken, marinade for 3+ hours and grill until 165F+
