So...I have been making my FIVE breakfast Casserole for a LONG time! I make it often because it's so easy, bakes right along with my other meal prep with little hands on time and is so yummy; but, I was really digging on the Sweet Potato Crust of my Frittata last week...

I love "breakfast casseroles" for so many reasons!

-They are super simple to make

-They are very healthy and can easily be made in a balance of macros

-They are versatile - you can add any veggies you like

-They are perfect for breakfast, snacks or dinner
