Tzatziki Veggie Salad

My favorite Summer Salad, my Grill & Chill go-to, cookout staple, and pot luck party bring along...with a slight twist! 🌈 .

This Salad is slam packed with yummy fresh, raw veggies and herbs! There are so many options with this one! Almost any veggie works well in this one, allowing for substitutions for whatever you have on hand! If you don't have a spiralizer, no worries, just slice the veggies thin and toss them in! ;) It makes for a great side, snack or entree paired with a little protein!

I went back to an old favorite, Greek Zucchini Anti-Pasta Salad, swapped out the cucumber for daikon radish noodles, left off the feta and subbed my normal lemon vinaigrette for Organic Tzatziki Sauce (Costco) thinned with apple cider vinegar & lemon juice and added fresh mint & loads of fresh dill and holy pepper flakes I can’t decide which way I like it better!!! 😉

What you need...

1 Daikon Radish, spiralized

2 Zucchinis, spiralized

1 cup Bell Pepper, roughly chopped (I always use a blend of Red, Yellow and Orange for color)

1 can Quartered Artichoke Hearts, drained and rinsed

1 cup Cherry Tomatoes, halved

1/4 cup Kalamata Olives, chopped

1 cup Red Cabbage, thinly sliced

1/3 cup Red Onion, thinly sliced

Red Pepper Flakes to Taste

Toss all your veggies into a large bowl, add dressing and stir to combine. Allow to marinade, covered in the fridge for a few hours before serving! Top with Red Pepper Flakes to Taste! Simple!

Dressing

2-3 tbsp. Organic Tzatziki Sauce

1 tbsp. ACV

The juice of Half a Lemon

Handful of Fresh Dill & Mint, chopped (you really can't go overboard .
